Unfortunately, not all sorts of tea can be prepared using the same method. To prepare top qualities of green tea such as Sencha or Gyoruku, it is important to leave the water boiling for some moments and then allow it to cool down slightly before you slowly pour it over the leaves. This is in contrast to the preparation of black teas such as Darjeeling, Ceylon or Assam teas, which are steeped with boiling water.
If you don't allow the water to cool down, it will spoil the tea leaves and the tea will taste bitter. As a rule of thumb, the better the quality of the tea, the lower the water has to be. For standard quality green tea, use water that has a temperature of 90°C (194° F), for top quality green tea, use water that has a temperature of 70°C (158° F). Use an electric water kettle to boil the water, never use a microwave to boil the water.

Use a simple thermometer to measure the water temperature before you pour it over the tea leaves. If you don't have a thermometer allow the water to cool down for 3 minutes to reach 90°C (194° F) or 7 minutes to reach 70°C (158° F). Of course, this is only a rule of thumb, but it works quite well if the ambient temperature is around 20-25°C.
Another important factor is the quality of the water that you use. Tap water that contains too much chalk (calcium carbonate) or is chlorinated should be avoided in any case. Use filtered water or still mineral water instead.
You will get even better results, if you warm the brewing pot before you pour the water into it, otherwise the water will cool down too fast, leaving the Sencha or Gyoruku leaves brewing at a temperature that is other than optimal. After the infusion period is over, pour the tea into prewarmed cups and enjoy a delicious cup of this fantastic beverage. If the infusion time is not written on the tea packing, ask the staff of your tea shop for the appropriate infusion time as it will differ even among green teas.
Tip: Don't discard the tea leaves after the first brewing as they can be reused to prepare tea at least one more time! However, for a second infusion, let the tea brew for only three-quarters of the time of the first brewing.
